Borgo Selvaggio is an immersive, sensorial, unrepeatable experience. The project was born from a collaboration with Teritoria and unites ancestral cuisine with the breath of the forest, conviviality with simplicity, the ritual of fire with the discovery of the senses.
One walks through the reserve’s trails, stops where the greenery grows denser, lights the fire, and begins to cook. No artifice—only hands, embers, seasonality. The dishes take shape before guests’ eyes, using local raw materials and the slow rhythm dictated by nature. Then comes dinner together, around a single long table nestled among the trees, beneath the sky of the most authentic Umbria. A primordial gesture that becomes memory. A collective ritual where cuisine becomes language, listening, storytelling.
Borgo Selvaggio is not merely an event: it is a moment of profound connection, an invitation to shed the superfluous and rediscover the taste of the essential.
Each edition is different, conceived in harmony with the season, the landscape, and the ingredients available. The menu is not fixed but lives through its relationship with the place. The experience may include guided walks, foraging for wild herbs, fire preparation, storytelling around the table.
