The Restaurant

Our culinary vision

The genuine taste of the Umbrian territory

The restaurant of Tenuta Borgo Santa Cecilia is a living tribute to the Umbrian land. Here cuisine becomes storytelling: every dish is created to return, through intense flavours and local ingredients, the deep and wild soul of the territory.

The menu, rich in evocative inspirations—such as Umbrian Apennine Ramen with dried roe deer broth or guitar-cut spaghetti with acorn flour, pheasant, and truffle—speaks of a land that is at times wild and harsh, yet generous and authentic. With few tables, solid wood furnishings, and artisanal ceramics, the restaurant is an intimate experience spread across the hamlet. Here one does not simply dine: one lives the most authentic Umbrian soul, bite after bite.

Tradition, creativity, and respect for nature

The culinary philosophy we draw inspiration from stems from a simple yet profound idea: respecting what the land we love offers. The meat comes from selective hunting or from free-range internal farming, processed in its entirety with awareness and technique. Vegetables and cheeses come from small local producers.

Flavours reflect Umbrian tradition, renewed through fire-based cooking, fermentations, and creative nuances of exotic gastronomic influences.
